What is Kimchi?

The kimchi is a traditional Korean dish that contains fermented vegetable and seasonings with onions, garlic, ginger, chili peppers, sugar and salt. Kimchi is usually enjoyed as a side dish, although it can also be enjoyed as a meal in itself. is enjoyed at varying stages of fermentation, according to preference.

The fermentation process speeds up with room temperature and the kimchi get sourer tasted. In the refrigerator, it stays fresh much longer — about 3–6 months — and continues to ferment, which may lead to a sourer taste. Be sure to refrigerate your kimchi at or below 39°F (4°C), as warmer temperatures may accelerate spoilage.
